But the one I  like goes something like;-
While Theatre is Life & Film Art. TV is still just furniture!

I love the dialog from "Shakespeare in Love" - I keep it at the
top of my website LOL

"Allow me to explain about the theatre business.? The natural
condition is one of insurmountable obstacles on the road to
imminent disaster"

" Nothing.? Strangely enough it all turns out well."

I know - I love the one from Shakespeare in Love BUT don't want my students to know it all turns out well - I want the FEAR in them

A cast without a crew is just a bunch of people standing in the dark
reading their lines.

A crew without a cast is just a bunch of people pushing buttons and
moving furniture.

Sir Laurence Olivier to Dustin Hoffman regarding Hoffman's Method Acting during Marathon Man. (Possibly approcyphal, but a great story... supposedly in order to prepare for a scene where he's been up all night, Hoffman stayed up all night... prior to the scene being shot, Olivier asked Hoffman "what's the matter with you?" After Hoffman explained, he got the above quote in reply. Authentic or not, I love it.)

By the way, I agree 100% on Hamlet's Advice to the Players. I have it hanging in my office... it was a director's gift from the cast of I Hate Hamlet, as that was the speech I beat up our Barrymore over more than anything else.
