I am trying to find a way to 'pop' a champagne cork and have it foam onstage.  The actor then drinks directly from the bottle, limiting my options.

Any help would be greatly appreciated.

I haven't tried it but what about some kind of soft drink? ginger ale comes to mind. I know it is not the best thing for an actor to drink but it should foam and look pretty good.

If you add a 1/2 tablet or so of Alka-Seltzer to the
bottle before you re-cork it, it will pop and foam
onstage. (You'll need to experiment a bit with the
exact dosage to get the effect you're after.)

The sweetness of the ginger ale easily masks any
medicinal taste of the Alka-Seltzer. (Or, if your actor
is prone to heart-burn, then this solution is ideal.)

This must be done prior to showtime as the fizz
tends to not last overnight.

Problem with Alka-seltzer, is that it contains asprin.  Might not want to take that chance.
